Hello Pilates lovers!

With just under a week to go until Christmas, I just wanted to say thank you for coming along to my classes this past year. I really love teaching you all and I hope you have enjoyed the classes as much as I have.

As so many of you asked me for the recipe for my Rum Balls last week I thought I would send it to you all as a little Christmas pressie. Let me know how you get on if you make them. Remember, these are not healthy. It's all about balance!

Rum Balls

Ingredients

250g digestive biscuits
80g dessicated coconut
2 heaped tbspns cocoa powder
1 tin condensed milk
4 tbspns dark rum
Dessicated coconut for rolling

Method

Whizz the digestive biscuits in the food processor or place in a strong plastic food bag and bash with a rolling pin, until crushed to fine crumbs. Mix in the cocoa powder and dessicated coconut. Add the rum and mix again to distribute evenly. Finally, add the condensed milk little by little, until you have a stiff mixture. Roll into balls and coat in dessicated coconut. Can be kept in the fridge if they are a little soft.

NB:  Some digestive biscuits are drier than others so don't add all the condensed milk at once in case you end up with a mixture that is too wet.
