Rum Balls
Ingredients
250g digestive biscuits
80g dessicated coconut
2 heaped tbspns cocoa powder
1 tin condensed milk
4 tbspns dark rum
Dessicated coconut for rolling
Method
Whizz the digestive biscuits in the food processor or place in a strong plastic food bag and bash with a rolling pin, until crushed to fine crumbs. Mix in the cocoa powder and dessicated coconut. Add the rum and mix again to distribute evenly. Finally, add the condensed milk little by little, until you have a stiff mixture. Roll into balls and coat in dessicated coconut. Can be kept in the fridge if they are a little soft.
NB: Some digestive biscuits are drier than others so don't add all the condensed milk at once in case you end up with a mixture that is too wet.
