Low Carb Peanut Butter Cups


For the peanut butter filling:
1 cup unsweetened creamy peanut butter
2 teaspoons coconut oil, melted or slightly soft at room temperature
3 tablespoons honey or less

For the chocolate coating:
16 ounces dark chocolate chips
2 ½ teaspoons coconut oil
½ teaspoon flaky sea salt, optional


For the peanut butter filling:
In a medium sized bowl combine peanut butter, coconut oil, and honey.  Stir well to combine.

For the chocolate coating:
In a medium sized microwave safe bowl combine the chocolate and coconut oil. Melt, using the microwave set on low, in 20 second increments, stirring in between, until completely melted.  Stir until smooth.

Line 24 mini muffin pan with paper liners.  
Fill each mold with 2 teaspoons of melted chocolate.
Top each with a teaspoon of peanut butter filling.
Top with another teaspoon of melted chocolate.
Sprinkle with sea salt if using and place the pan in the fridge for 20minutes or until the chocolate has set.  Keep stored in the fridge in an airtight container for up to 2 weeks.

*  Substitute the peanut butter with almond butter for a Paleo version.
