A Special Word From Chef Clay
Have any of you gone through the experience of feeling great joy yet sadness at the same time?  Well, that’s what’s happening to me right now. The great joy I’m having at the moment is that after all these wonderful years I’ve had in the foodservice industry, I am going to be able to retire on February 26, 2021. Yup…. it’s true. I am really looking forward to spending more time with our one and only grandson. I’m also looking forward to fishing a whole lot more. As a matter of fact, I’ve already got some fishing trips booked soon after leaving the school. This brings me to the sadness in my heart. These past 3+ years at the Roberti Culinary Pathway have been nothing short of AMAZING!!!
I’m not sure what’s had a larger impact on me….

My Students:   All of the students who came to the school just looking for someone to guide them a little and give them a chance in life when no one else would; watching them grow over nine weeks and build confidence in themselves; after graduating, helping them to get a job. For some of them, it was the first job of their lifetime.

The Community and Beyond:  The ability to feed tens of thousands of very needy families in our local community and all around Lake County - the smiles we were able to put on their faces is something I will never forget.

Our Faithful Supporters, Donors and Volunteers:  This is one area that continues to amaze me and I am in awe of. I am completely blown away by how many fine people and organizations there are out there who truly believe “we together” can make a difference in this world. I have seen first-hand families at their breaking point be able to see light at the end of the tunnel where beforehand, hope was just a dream. I can’t thank you enough for everything everyone has done to support the Roberti Community House and the Roberti Culinary Pathway. My hope and prayer is that you will continue supporting these two programs in my absence.

Maribeth Roberti:  How can I not thank the person whose vision and never-ending love of the community, coupled with her unwavering passion and drive to succeed, help all those in need?  Maribeth…it has been my honor and I feel extremely blessed to be just a cog in the large wheel of supporters that help you make dreams come true. You are an inspiration to us all. You have touched the lives of so many that I can’t even count that high. Thank you so much for everything you’ve already done and will continue to do in the future. I have complete faith that whoever takes over my position as Culinary Arts Instructor will do an excellent job because of your inspiring leadership.

May God bless you and everyone who has taken a role in making the Roberti Community House and the Roberti Culinary Pathway the success it is today.  As the old saying goes, “The Show Must Go On.”  As I previously mentioned, my final request to all of you is that you continue to support this wonderful non-profit organization so Maribeth, her team and the host of unselfish volunteers can continue feeding and enriching the lives of so many people in need.

Until next time….
Chef Clay Erickson
