RCP Kitchen Moves Full Steam Ahead!

At this time of year, we would normally have held our annual Roberti Culinary Pathway fundraising event. But this year’s event was indefinitely postponed as we strive to find our new normal. The work in our culinary kitchen, on the other hand, continues to move full steam ahead. and we need your financial support to allow RCP to continue with instruction and do the important work of reducing hunger for the most marginalized. 

Food Prices Continue to Rise
And so do requests for support  

According to US Bureau of Labor statistics, "prices for all food consumed at home rose 4.5% in September driven by a 10.5% jump in prices of meat, poultry, fish, and eggs". With food prices surging many are forced to make difficult choices. 
 We are on target to provide
25,000 meals this year to
food-insecure Lake County residents
25,000 meals is more than double the kitchen’s output prior to the start of the pandemic. We are able to expand because of the increase efforts in recovery of edible food that would otherwise go to waste. While keeping costs down we continue to teach and learn ways to "higher purpose"  food rescued and connect it to families in need.

Where do the meals go?  We deliver and arrange for  fresh, balanced meals to get to homebound residents throughout the county, feed children attending daycare and  afterschool programs, and provide weekday protein-rich lunches on-site. Families have been referred to us for temporary support by health agencies, schools, churches, day care centers  and social service agencies.

Each one of those 25,000 meals has been prepared by community members who are interested in obtaining work in the hospitality industry or pursuing a food-related entrepreneurial endeavor. As they feed their neighbors each day, they are getting practical hands-on experience in a whole range of concepts essential to the operations of a commercial kitchen. This includes everything from kitchen sanitization and safe food storage to meal development, budgeting, batching, packaging, and transportation.

Our culinary kitchen also helps community members see new potential in the food that is donated, which is often in bulk and often unfamiliar. RCP teaches students how to “stretch” limited amounts of ingredients and work with other ingredients  that are in surplus.

Whether we have received a large donation of bananas, garbanzo beans, or chicken breasts, we instruct and we inspire.

Even with donated food and a robust team of volunteers, there are significant costs involved in keeping RCP’s grassroots operations up and running.
Here are a few examples of the challenges and changes we’ve seen this year:
  • With expanded prepared meals going out everyday, packaging and kitchen sanitation supplies  are up now costing $3,000 a month.
  • Food must be purchased beyond donated amounts – sloppy joe’s need buns!
  • Gas and transportation costs have greatly increased to pick-up, deliver, and distribute food.
  • Rent, salaries, and utilities must continue to be paid.
  • We need new Computers and monitor with HDMI or DisplayPort connection.
  • We purchased a critical walk-in cooler that will cost almost $20,000 fully installed.
  • Two additional spaces have been secured to store materials and food to keep up with demand.
