New on the bubbles shelf this week is Tillingham Petillant Rosé. The Tillingham project is headed by established winemaker Ben Walgate, formerly of Gusbourne in Ashford, and is situated in Peasmarsh, East Sussex. With the target being for the estate vines to produce its own winemaking grapes by 2020, for now Ben is selecting the best local and biodynamic grapes as a base to create his English sparkling wine. The Petillant Rosé is a super bright, fresh and clean light sparkling pink, with apple, pear and a delicate funk on the palate - definitely a worthwhile tipple in these sunny but bracing autumn months. We'll soon be adding another of his wines - an Ortega grape white. These are both tiny batches (1291 bottles of the pink) and will be gone when they're gone.
And, tomorrow (Saturday 27th), we will be sampling a 2016 Riesling from Kumpf & Meyer - this is a fun, limey & cloudy bottle from a young producer bottling organic wines in The Alsace. Come by any time and help yourself to a pour of the bottle in the sampling sink.
First things first - we were lucky enough to get our hands on Deya cans! Fancy Seeing You Here is a grapefruit & lemon verbena Belgian-style pale from one of our top 5 UK brewers these past couple of years. Now in the fridge, and it won't be there for long, so come get it whilst it's cold!
Hill Country - the sweet Spon is upon us ...
Our Spon bottles arrived on Thursday and we have a couple left for the weekend. This is essentially a gueuze, but Texan - a blend of 1, 2 and 3-year-old 100% spontaneously fermented beers (i.e. lambic, but Texan). It's difficult to stress just how highly we regard Jester King - this will match or beat any of the best stuff coming out of Belgium. Jester King always work to express their local terroir - both the malt and the wheat that form the base of the brew are Texas-grown and the spontaneous ferment takes place in their coolship, picking up the wild yeasts living in the Texan Hill Country air. This is Spon 1 2017, blended on 25.1.17.
We also have some new cans cold-chained in from Illinois - Destihl kicked off their brewing life in 2007 with their first Gastrobrewpub in the town of Normal (seriously), Illinois. We have two of their kettle sour offerings - a Blueberry Gose (blueberry, coriander & sea salt) and Cranberry Criek (cranberry & sweet cherry).
A taste of Bohemia (via Tottenham) - Bohem have made a new entry to the fridge with their first ever can release. These gents have set out with a committed focus to brewing Bohemian-style lagers within the foggy fringes of our fair city. Having recently upgraded to a new site in N17, founder and head brewer Petr imported a bespoke brewhouse, along with new brewer Matěj Křížek. This group of Czech brewers are driven by a desire to consistently produce high quality and authentic lager styles. Definitely one to watch. For now our fridge is holding Amos, a 4.9% Czech-style Pilsner, and Druid, a 5.7% schwarzbier (black lager).

Cigar City of Tampa, Florida have brought their famed house IPA Jai Alai, and they have come together with Thornbridge and their much loved Jaipur to create Jai Jai, a serious collaborative IPA to take note of - now in the fridge.
