3-week Foundational Nutrition Series!

This 3-week series replaces the "Core Curriculum Series" (formerly held first Tuesday of every month), in order to provide a more condensed educational experience focusing on the building blocks of our bodies, our metabolism, our health- our foundation.

- May 10 (Week 1): Proteins, function, use, sources, and metabolism
- May 17 (Week 2): Carbohydrates, functions, portions, sources, use
- May 24 (Week 3): Fats, types, function, metabolism, healthy sources

RECIPE- Great for the beach or a light lunch!
Curried Chicken Salad Wraps: 
In a large bowl combine ~3 large (or 4 medium) cooked chicken breasts (shredded), 1/2 cup plain Greek yogurt, 3 Tb olive-oil mayonnaise, 1 Tb red curry paste (find in any grocery store) or 1.5 tsp curry powder, 1 Tb chopped cashews, juice from 1/2 lime, and 2 Tb raisins.  Mix to combine well, then spoon even portions in to 8 rinsed lettuce cups or chard leaves.  Chill until ready to eat, or top with fresh chopped cilantro (optional) & enjoy immediately!  Suggested: pair wraps with a side of fresh fruit or crisp fresh veggies.

Nutrition per 2 lettuce cups with 1/4 cup filling per cup: 205 calories, 28 g protein, 10 g carbohydrate, ~6 g fat (1 g saturated), 240 mg sodium, 1 g fiber.
